Recipe for these very easy Coconut Cakes I made today

These cakes are quick and easy to make using a hand whisk
6 ozs Plain flour
3 teaspoons Baking Powder
4 ozs Granulated Sugar
4 ozs Dessicated Coconut
4 ozs Butter ( remove from the fridge for a while to soften it )
2 Eggs
6 tablespoons of milk
Simply whisk all of the ingredients together until they are smooth and light in colour
Spoon into a loaf tin and cook for 50 minutes at 170 degrees in a Fan Oven on the middle shelf
I cook two at a time for economy
While still warm brush any Jam on top and sprinkle with Coconut
