Recipe for my favourite Tipple Cake


8 ozs Self Raising Flour
1 teaspoon Baking Powder
4 ozs Granulated Sugar
4 ozs Butter ( remove from the fridge to soften it )
1 Egg
A pinch of Salt
4 fluid ozs Milk
8 ozs Mixed Dried Fruit soaked in 3 tablespoons of your favourite tipple 
( I used Baileys as my chosen tipple )
2 teaspoons Mixed Spice

Take the butter out of the Fridge to allow it to soften
Pour the Baileys over the Dried Fruit and stir
Leave fruit to soak while you are measuring the other ingredients
This will plump up the Dried Fruit and make it taste delicious

Put all of the ingredients EXCEPT DRIED FRUIT in a bowl and whisk until smooth
Add the soaked dried fruit and whisk on the LOWEST speed just long enough to cover the fruit without chopping it up.
Pour into a lined Loaf Tin
Smooth top gently WITHOUT PRESSING DOWN to keep the air in the mixture
Bake in the centre of your oven at 170 degrees for a Fan Oven for 50 minutes

  3. Marion - I bet this is fabulous. Like the word Tipple...not a word I have ever used but love the sound of it...much more interesting than the word "spirits". (LOL)
